When drying figs in a mesh belt dryer, you need to pay attention to the following aspects:
1. Temperature control: The drying temperature of figs should be gradually increased, and the initial temperature should be set at 70-85°C to allow a large amount of water in the figs to evaporate. As the moisture decreases, the temperature should gradually decrease to 50-60°C. Excessively high temperature will cause the surface of figs to harden, affecting the taste and quality.
2. Humidity control: Humidity is a key factor affecting the drying effect of figs. In the early stages of drying, the humidity should be controlled at around 50% to allow the figs to expel a large amount of water. As the moisture decreases, the humidity should gradually decrease to about 30%, and finally to about 10%. Controlling humidity helps maintain fig shape and taste.
3. Wind speed and air volume: Appropriate wind speed and air volume can help speed up the drying speed of figs and improve drying efficiency. However, too high a wind speed may cause the surface of the figs to dry too quickly and the internal moisture cannot be discharged, thus affecting the quality. Therefore, the wind speed and volume should be adjusted according to the size and moisture content of the figs.
4. Turn regularly: During the drying process, figs should be turned regularly to allow them to be heated and ventilated evenly to avoid local overdrying or overhumidity. At the same time, turning also helps to drain the moisture inside the figs.
